were analyzed 7 samples of chicken broth that also contain vegetables, three tablets which are dried (Knorr and Maggi Avecrem) sold in cartons, and four (Knorr, Gallina Blanca, Aneto and Don Simon) UHT liquid stocks packaged in cartons of a liter. All can be stored at room temperature for several months, but once opened, the liquid should be kept in the refrigerator for no more than four days.
These wines can be taken as such, but are also used as a condiment for rice, pasta, soups, stews, meat or fish sauces. If broth is eaten as tuning the stomach and help fight hunger, while its use as a condiment to add flavor dishes. But have little nutritional interest are quite salty and dehydrated (not fluids) contain many additives, especially flavors.
To compare prices and nutritional characteristics of both types of stock, we calculated the cost of one liter of broth with dried tablets following the manufacturer's instructions, two for a liter in all cases. With each package of Knorr cubes and Avecrem (12 units) are prepared 6 quarts of broth and the Maggi (24 tablets), is get 12 liters. As expected, price differences are enormous: one liter of broth with dried tablets costs on average $ 0.20, while the cost of liquid stocks in brick was 2.02 euros per liter on average, ten times more. Maggi (out to 0.13 euros a liter) is the cheapest. The most expensive shows was Aneto (3.3 euros), Maggi 25 times and 13 times more than the other two dehydrated. Gallina Blanca (1.71 euros) and Don Simón (1.59 euros), both liquid stocks, cost about half that Aneto but still much more expensive than dried.
Two of the seven break the labeling rule and the two liquids (Don Simon and Gallina Blanca) and for the same reason: to highlight ingredients and images not indicate the quantity. The seven indicate their nutritional composition, although the standard does not require it.
"Feeding these wines?
The nutrient content of these wines (average -0.6% protein-, fat -0.3% - and carbohydrate, 0.4%) is very small and similar in all of them, and so does its value calories (on average, about 6 calories per 100 milliliters). A cup of broth is 200 milliliters, so bring (always talking about averages) one gram of protein, other carbohydrates, half a gram of fat and only 12 calories. Liquids are generally a little more protein and less dehydrated carbohydrates, yet a similar caloric intake. And the same amount of salt, which remain substantial (0.9%, on average) not excessive sins, it is estimated that a food is too salty from 1.5% salt. In conclusion, these wines just feed, are merely a supplement to the diet.
Most notably, salt
These wines contain a considerable amount (0.9 g/100 ml medium) salt, the maximum for Gallina Blanca (liquid) and Maggi dehydrated with 1.1 g / 100 ml, and the minimum for Knorr dehydrated and Aneto (0.7 g/100ml). The rule sets a maximum of 1.25 g/100ml salt, no sample exceeded. But have a cup of 200 ml of broth equivalent to 2.2 to log 1.4 grams of salt, when it advisable not reach 6 grams of salt a day. On the other hand, are considered food high sodium content which exceeds the 0.6 g/100ml (or 1.5% saline). But its presence in wines is due not only to salt, as flavor enhancers added dried high in sodium, such as monosodium glutamate (in the three dehydrated), disodium guanylate (Knorr and Maggi), disodium inosinate (Knorr and Maggi) and sodium phosphate (Maggi). But there is no significant difference in the amount of sodium (mean: 0.3 g/100ml) between the wines. Some contain other additives (organic acids, antioxidants, colorants. Aneto broth is more natural, no added additives, thickeners and flavorings.
The best money lies with Knorr dehydrated, as one of their favorites in the tasting, one of the cheapest (a gallon goes to 0.23 euros) and the moderate amount of salt (0.7%). Maggi dehydrated is another option (the cheapest, comes to 0.13 euros per liter) but has not incorporated other additives such as antioxidants and colorants. The best choice among Knorr liquid stocks are the cheapest of its kind.
